When someone makes us a promise, we most generally can count on that promise, can't we? I mean, who wants to hear someone promise you something, and not follow through? We've all had broken promises throughout our lives, whether intentional or accidental. But, nevertheless, when it's broken, there's a void.  Your trust in that person has been broken also. You're afraid to ever trust again, right? Well, I can guarantee you one thing for certain. There is SOMEONE who is a Class #1 PROMISE KEEPER and that is Jesus Christ. Journey along with me for a page filled with promises that will never end. In fact, they'll take YOU into eternity!!!


"And being fully persuaded that, what he had PROMISED, he was able also to perform." Romans 4:21

Joshua 1:3 "I will give you every place you set your foot, as I promised."

Besides the literal ground still unoccupied for Christ, there is before us the unclaimed and unwalked territory of God's promises. What did God say to Joshua? "I will give you every place where you set your foot, as I promised." Then He set the boundaries of the Land of Promise---all theirs on one condition: they must march across its length and breadth, measuring it off with their own feet.

Yet they never marched across more than one third of the land, and as a consequence, they never POSSESSED more than that one third. They possessed only what they measured off and no more.

In 2 Peter 1;4 we read, "He has given us his very great and precious promises." The land of God's promises is open before us, and it is His will for us to possess it. We must measure off the territory with the feet of obedient faith and faithful obedience, thereby claiming and appropriating it as our own.

How many of us have ever taken possession of the promises of God in the name of Christ? The land of His promises is a magnificent territory for faith to claim by marching across its length and breadth, but faith has yet to do it.

Let us enter into and claim our total inheritance. Let us lift our eyes to the north, south, east, and west and hear God say, "All the land that you see I will give to you" (Genesis 13:14).

1.  A Promise Of A Savior
Micah 5:2 "But, thou, Bethlehem Ephratah, though thou be little among the thosands of Judah, yet out of thee shall he come forth unto me that is to be ruler in Israel; whose goings forth have been from of old, from everlasting."

After all.. isn't that what heaven should and will be for us. JESUS---our precious Lord and Savior, forever and always in His presence  loving, worshipping and praising the One who gave His all for us.

My prayer is that you all DO know my Jesus.. If you don't, your life must be so empty. Look and read all these promises again that God has given to those who are His.   But most of all, and above all  He gave us His very best. Jesus Christ, the same yesterday, today, and forever. He never changes.  His promises are from everlasting and He loves you more than you'll ever know.

CHICKEN ENCHILADA LASAGNA


I have made this recipe two different ways.   One is with flour tortillas and rolled up individually.   The second way was with lasagna noodles and rolled up individually.  Sometimes, it gets a little busy and there's too many people to make it for so I've made it like lasagna and used flour tortillas instead of lasagna noodles.  IT WORKS.   These are the same basic ingredients, 
but put together a little differently.   I know you'll love it!!  We do!! 

Ingredients:

4 cooked chicken breasts, diced
3 c. cheddar or colby jack cheese, shredded
Jalepenos, chopped, as many as you like
1 lg. onion, chopped
1 can Rotel (tomato with chiles)
8 oz. sour cream
2 can cream of mushroom soup
3  T. melted margarine
1 small jar salsa or picante sauce (hot, medium, or mild)
10 soft   large flour tortillas

In a large bowl, mix the chicken, 3/4 of the cheese, jalepenos, onion, Rotel, sour cream and cream of mushroom soup together.  

Coat the 13 x 9 " pan with the melted margarine (butter) or cooking spray.

Lay the tortillas end to end in the bottom of the pan.
Spread the chicken mixture evenly on top of the tortillas.
Cover with more tortillas and repeat the process so you have two layers of tortillas and chicken mixture.  

Mix other can of soup and salsa together and pour over top of all the tortillas. 
Make sure to spread evenly to coat the  tortillas (as they will dry out when baking). 
 Sprinkle remainder of cheese over top.

Cover with foil 

and bake at 350 degrees for at least 30 to 45  minutes (more if needed) and bake til a little brown and the edges are bubbly. 
Let sit for about 10 minutes before you slice and serve.  You can even shut the oven off if it gets done a little early.

FRENCH TOAST CASSEROLE


A very yummy addition to any breakfast, especially when there are people spending the night, or you want to have a nice warm breakfast for the kids before they go to school.   You can make ahead and refrigerate overnight ready to bake in the morning.  

Ingredients:
1 loaf French or Italian bread
8 large eggs
2 cups half and half
1 cup milk
1/4 cup brown sugar
2 teaspoons vanilla
1/2 teaspoon cinnamon
Dash salt

Tear the bread into big chunks and set aside in bowl.  Spray Pam  into a 13 x 9 dish.   Spread the bread all over the pan evenly.   In a large bowl, put the eggs, half and half , milk, sugar, vanilla, cinnamon and salt.   Beat well with a whisk until totally blended.

Pour mixture over the bread.  Make sure it's all covered evenly .   

Cover with foil and refrigerate overnight.

Preheat over to 350 degrees.  Bake for at least 45 minutes or until it's browned and fluffy and the edges bubbling.  

Remove from oven and serve with maple syrup or powdered sugar.  

TUNA BOATS


A really quick and tasty dinner for those after school days is Tuna Boats.  Ask my kids about it and they will smirk and turn their noses up to it.  In the "lean" days especially during Bible School and having a brood of seven kids, I really had to watch my budget.   So----Tuna Boats were made really only once a month.  But if you were to hear them,  "We had them ALL the time."

Ingredients:

1 pkg. hot dog buns ( 8)
2 cans white tuna, drained (which I prefer rather than the regular tuna)
1/2 chopped onion, fine
1/4 cup chopped celery, fine
3 Tablespoons Mayonnaise
4 oz. sharp cheddar cheese (more if you like)

In a medium sized bowl, place drained tuna and flake it till all the big chunks are gone.  All the onions, celery, may and shredded cheddar until mixed well.

Fill each of the hot dog buns with the mixture.  Place each one in aluminum foil and close up on top and sides.   Put the open side facing up. 

Preheat oven to 350 degrees.      Bake for about 20 minutes.  Check one to be sure the cheese is melted.  If it isn't, then leave them in for another 10 minutes.   Take out and keep out til ready to serve.  

It's really VERY good.   I think you'll like it!!

A VALENTINE TEA (from February 2013)

Having  a tea takes a little planning, but you first have to take into consideration the month or time of year. 

This was from February 2013, so obviously I chose the Valentine theme.   It was so much fun to do. 
It's so much fun to shop for Valentine things.  The old fashioned doilies are always a beautiful accent as well as rose petals and red candles.   I always buy and use fresh flowers.  Most times, I use tea pots as the vase to hold the flowers.


I found these delicate with  red and pink rose bud soaps that I decorated as a favor in the middle of the dessert plate (with doily beneath).    Each setting also had a mini cupcake holder with candy hearts AND of course, CHOCOLATE!!

I don't think there's anything more beautiful with a well set table.  Very appealing to the eye.  I always use my Grandmother's china.  And I have a collection of tea cups and everyone gets their own special one for the meal.  
I made home made chicken salad sandwiches.  I bought a heart-shaped cutter thus making heart-shaped sandwiches.  Yum.

Veggies are always a good addition to any luncheon.  What I loved about this was a "Pinterest" idea to make the dip servers out of peppers.  Very pretty, aren't they?

A favorite part of this luncheon was fresh fruit with a yummy fruit dip.   I had blueberries, pineapple, grapes, kiwi, blackberries and strawberries.  Delightful to any palate. 

Then, of course, what would a Valentine themed tea be without chocolate.  I found the most awesome, delicious triple chocolate cake and prettied it up with some hearts.

And to add a little more ... here's the dessert I made for my hubby for Valentine's Day.  Scrumptious.
